On completing an honours degree in three-dimensional design, Ceramics at Cardiff School of Art and Design in 1994, Mandy returned to Wexford, her home county, to establish her studio pottery. She moved to her studio in rural Co. Tipperary in 1999. Her she specializes in wood-fired salt glazed stoneware, building her current kiln in 2006. Her work is represented in public and private collections including the Department of Foreign Affairs Embassies collection, the Ulster Museum, Belfast and the FuLe International Ceramic Art Museums (FLICAM), Fuping, China. Mandy exhibited with the Crafts Council of Ireland at SOFA, Chicago and Collect, London and she was a selected exhibitor at Ceramic Art London. In 2013 she won both the Irish Ceramics Award and the Crafts Council of Ireland Award at the Mill Cove Gallery.

In 2010 Mandy completed an MA in the History of Art and Architecture. She lectures in Ceramics at Limerick School of Art and Design.

Her work explores ideas of landscape, the vessel and containment.
